CHEF’S TABLE AT KENSINGTON RIVERSIDE INN

Canada’s Fourth Best New Restaurant in 2008 (EnRoute Magazine)

On January 24, 2008, Kensington Riverside Inn celebrated the opening of Chef’s Table, a new upscale dining experience at Calgary’s premiere Luxury Inn.  The intimate 19-room property, under the management of Mark Wilson and his team at the Hotel Arts Group, has been contemporized with the addition of a new 40-seat upscale restaurant, a 30-seat fireside lounge and a 20-seat patio for dining in the warmer months. 

Executive Chef Theo Yeaman was recruited by Duncan Ly, the Corporate Chef for the Hotel Arts Group, to join his talented team.  Prior to that, Theo Yeaman (pronounced Tay – o  Yay - man), was working with a Michelin Star Chef at Jesmon Dene House, a 38-room boutique hotel in Newcastle, United Kingdom.  Beforehand, Chef Yeaman worked stage (translated as an internship) at the Fat Duck in London – a 3-star Michelin-rated restaurant.  Theo also worked at Canoe in Toronto and with Raw Bar’s Johnathan Canning at Lumière in Vancouver.

Chef Yeaman prepares regional items with great reverence for classical European methods but, like the Inn itself, contemporized with his own artistic flair.  Items like Dungeness Crab Bisque; Poached Arctic Char with Shellfish Velouté; Sous Vide Saddle of Lamb; Seared Halibut with Fiddleheads; Truffle Agnalotti with Apple and Celeriac Crème are among the sumptuous dishes that can be enjoyed in 7-course tasting menus or ordered “à la carte.”

Chef Yeaman’s creations are receiving a host of praise from diners and restaurant critics alike.  Celebrated author and restaurant reviewer, John Gilchrist remarked that his experience at Chef’s Table was “the best meal I’ve had in Calgary so far this year” awarding it a coveted 9 out of 10.  (CBC Eye Opener). Complementing the wonderful cuisine is a knowledgeable and attentive service team led by Josh Johnson, Maitre d’Hotel.  His experienced team is pleased to offer great wine pairing options to round out the dining experience. 

Chef’s Table is an intimate room that features an open kitchen design where diners can witness the talents of Chef Yeaman and his team at work in their pristine and busy kitchen.  The beauty of the design is that while the culinary theatre is unfolding in the kitchen, the setting is not distracting but rather a welcome accompaniment to a memorable dining experience.  The décor is contemporary and sophisticated but not grandiose.  The dining room features dark brown Poltrona Frau leather chairs imported from Italy; white Frette linen tablecloths; a stylish and distinctive navy-blue Karastan carpet; estate grey walls with grey semi-gloss metropolis trim; and a contemporary art display to complement the noteworthy collection on display in the Kensington Riverside Inn.

Chef’s Table is open daily for breakfast but closed on Sundays and public holidays for dinner.  Reservations are recommended, particularly on weekends.
